Our Natural Kitchen
Owner Galina has more than 30 years of experience cooking, as well as experience in the medical arts. Her passion and number one kitchen goal is to provide a healthy, natural diet to all of the children by cooking meals that are full of vitamins and nutrients.
Our current kitchen staff creates the same delicious and healthy foods Galina used, including as many fresh and organic ingredients as possible. The result? Meals from the kitchen at Orchard Park taste especially good, and are good for you!!
Our kitchen limits foods containing preservatives and all meals are made from scratch. We provide a well-balanced diet, exceeding the nutritional needs of State and Federal requirements.
We purchase from local vendors when possible, and in the summer months shop for produce at local farmer's markets. In the Spring, we grow our own Orchard Park garden at Galina's house! Many parents have asked, so Galina is in the process of compiling and creating a cookbook for parents offering classic Orchard Park recipes. Here's a sample for her Classic Russian Borscht:
- Ingredients: 2 stalks chopped celery, 1 onion, 2 diced carrots, 4 cloves squeezed garlic, small thin sliced cabbage, 4 medium baked beets, 1 1/2 cups organic ketchup (no fructose), 2 potatoes (optional), salt to taste, juice from 1 lemon, parsley, bay leaf.
- Preparation: Bake beets (day before OK), shred beets, place in bowl, add ketchup, lemon juice. Meanwhile, saute chopped onions, chopped celery, and diced carrots until soft (about 10 minutes). Add garlic.
- Bring 1 gallon water to boil (or less if you want thicker), then add sauteed veggies, then potatoes and sliced cabbage and bay leaf.
- When cabbage and potatoes are soft, add beets and boil for another 5 minutes, turn off heat, add chopped garlic and chopped parsley.
- Serve with sour cream.
Program Capacity
At the Excelsior location, our program is licensed to provide full-time care to 90 children. Currently, our classrooms are structured to accommodate 20 infant children between the ages of 6 weeks and 16 months, 30 toddler children between the ages of 16 months and 33 months, and 40 preschool children who are at least 33 months but who have not yet attended the first day of kindergarten. The Crosstown location is licensed for 45 children.
Drop-in days are available to part-time enrolled families who may need an additional day of care added to their enrollment contract from time to time. These days, however, are dependent on the availability of classroom space. Any family interested in this option must check with the director to ensure that a drop in day is available for the requested day. Program hours are 7:00 am - 6:00 pm, Monday through Friday.
